Thai Grilled Chicken
4 chicken quarters (or any cut you prefer)
1/3 cup chopped fresh basil
1/3 cup chopped fresh cilantro
1 tablespoon minced ginger
1 tablespoon minced garlic
1 tablespoon minced chili
1 1/2 tablespoons soy sauce
1 1/2 tablespoons fish sauce
1 1/2 tablespoons olive oil
1 1/2 tablespoons brown sugar
1. Combine all ingredients except chicken in a bowl, mix thoroughly.
2. Add chicken and allow to marinate in the refrigerator for up to 24 hours (the longer, the better!)
3. Grill chicken until center is no longer pink and juices run clear.
