How to Make Chipotle Mayo

One of my favorite sandwiches on the menu at Panera Bread is the Sierra Turkey. The thing that makes that one so irresistible to me, aside from the awesome Asiago Focaccia bread, is the zing of the Chipotle mayo that's on it. I just love that flavor, so I wanted to learn how to make it at home. It's actually pretty easy, so here are the instructions, if you'd like to try it too. You will need 1/2 cup of mayo. It must be the real thing, and not salad dressing or "Miracle Whip". Light mayo is fine; that's what I use. You will also need two chipotle peppers in adobo sauce, and 1 Tbsp. of the adobo sauce itself. A chipotle pepper is a jalapeƱo pepper that has been dried and smoked. You should be able to find them near the other Mexican food items in your grocery store.
Combine all of the above ingredients in a food processor, and pulse until well blended.
Voila! Here is the finished product. It has a great spicy, smoked flavor. Use it to jazz up your everyday sandwiches, for a different change of pace.
